A note from our chef

This is the perfect sauce to serve with my slow-cooked beef ribs, or any barbecued meat dish for that matter. If kept in the fridge, this will keep for up to 3 months.
Rosie recommends: If you’d prefer a smoother sauce, simply run the sauce through a sieve after the total cooking time.

Here’s what you’ll need

  • 8 dried apricots chopped into small pieces
  • 200g tomato ketchup
  • 2 tsp Worcestershire sauce
  • 2 tbsp clear honey
  • 30g soft brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Sea salt and freshly ground black pepper

Step-by-step method

  1. Simmer all ingredients together in a pan with the lid on but not fully covering the pan, for about 40 minutes.
  2. After 20 minutes, taste test – if you want a sweeter sauce, add more honey. For a tangier sauce, add more cider vinegar.
  3. Cook for the remaining 20.
