A note from our chef
This is the perfect sauce to serve with my slow-cooked beef ribs, or any barbecued meat dish for that matter. If kept in the fridge, this will keep for up to 3 months.
Rosie recommends: If you’d prefer a smoother sauce, simply run the sauce through a sieve after the total cooking time.
Here’s what you’ll need
- 8 dried apricots chopped into small pieces
- 200g tomato ketchup
- 2 tsp Worcestershire sauce
- 2 tbsp clear honey
- 30g soft brown sugar
- 1 tbsp apple cider vinegar
- 1 tsp onion powder
- 1 tsp smoked paprika
- Sea salt and freshly ground black pepper
Step-by-step method
- Simmer all ingredients together in a pan with the lid on but not fully covering the pan, for about 40 minutes.
- After 20 minutes, taste test – if you want a sweeter sauce, add more honey. For a tangier sauce, add more cider vinegar.
- Cook for the remaining 20.
