A note from our chef
An ultimate comfort food in my book, short ribs slow cooked never fails to satisfy. The perfect recipe to include in your next BBQ spread, this is such an easy one to master. Marinade, slow-cook, enjoy.
Rosie recommends: If the weather is on your side, or you simply fancy taking this dish to the next level, place the ribs on your BBQ to add an extra smoky flavour.
Here’s what you’ll need
- 4 Lakings beef short ribs (around 2kg)
- 120ml red wine
- 60ml soy sauce
- 2 tbsp cooking oil
- 3 cloves of garlic, crushed
- Generous pinches of sea salt and black pepper
Step-by-step method
- Put all marinade ingredients (everything but the ribs) into a bowl, and mix.
- Place the ribs into a shallow baking dish, and pour over the marinade, turning the ribs in the marinade until evenly coated.
- Cover with cling film, and leave to refrigerate for 2-6 hours, turning ribs over half-way through.
- Preheat your oven to 140 degrees, place the ribs into the middle of the hot oven and slowly cook for 5 hours until the meat pulls apart from the bone easily. Be sure to turn them half-way.
- Serve with my Apricot BBQ Sauce.
