Tips from our ambassador chef Rosie Dicker
Our ambassador chef, Lincolnshire-based Rosie Dicker, has 25 years of experience, including Cordon-Bleu training and diverse roles in commercial kitchens and as a private chef, so she certainly knows a thing or two about creating Christmas menus.
Rosie’s approach blends classic and contemporary elements, focusing on flavour, seasonality, and a dedication to doing things well without unnecessary fuss.
Perfectly cooked turkey
To enhance your Christmas turkey preparation, Rosie recommends a simple yet effective method. If cooking a whole bird, slather it in seasoned butter the night before, allowing it to marinate in the fridge overnight. On the day of cooking, bring the turkey to room temperature, pour boiling water into the tray and cavity, and double-wrap with tin foil for maximum flavour and moisture retention.

Chateaubriand is delicate in flavour and will guarantee a very tender dish. The best cut to use for the ultimate Beef Wellington, we recommend cooking Chateaubriand medium-rare to rare to ensure a flavourful dining experience.
Rib of beef
Dubbed the ‘showstopper of cuts’, a rib of beef is something to behold. A full-flavoured product, rib of beef is so impressive, it deserves to be carved at the table. Perfect for large get-togethers, with more meat than you’ll find on most joints.
A classic boneless roast that strikes the ideal balance of tenderness and flavour. Sirloin is ideal when you need a foolproof and reliable joint to impress your guests.
Pork for a pleasing win
With its satisfying flavour and that satisfying crunch of crispy crackling, pork is a great alternative to turkey for Christmas. We have three roasting joints to choose from and of course, gammon.
Rosie says: “You can’t have Christmas without a gammon. You just can’t! This recipe takes a bit of attention, but the result is well worth it.”
You’ll need a 5kg gammon joint for this recipe, a handful of herbs and spices (including cloves), as well as fresh oranges and good quality honey, not to mention around half a day spare to create what will be a talking point for your guests.
Serve with Rosie’s simple red cabbage recipe and all the trimmings and save the leftovers to make the best cold meat and mustard sarnies the day after.
Richly marbled pork shoulder gives a succulent, flavoursome roast with a satisfying ‘bite’. The tiny seams of fat and silverskin meltdown to give fabulous flavour.
Loin of pork
Easy to carve, loin of pork is prepared using the traditional whole rib. It has a good, natural covering of fat on the outside. The fat is what makes this roast taste so good and provides the meat with full flavour benefits.
Belly of pork
For the crackling pros – pork belly is a really rich, soft, tender cut that will yield crackling to die for! Roast whole and prepare to be wowed. The tasty seams of fat add so much flavour and juiciness, there is no wonder this cut is a family favourite.
