Bring your very best to the table this Indian summer

How many times have you grumbled about the rain this year? We’re guessing a few. But there is still time for the weather to redeem itself, by way of an Indian summer.

Call us eternal optimists, but whatever happens, meteorologically, there’s still the opportunity to plan for outdoor dining experiences.

Here, you’ll find outdoor dining ideas, some of which have been inspired by Indian cuisine.

And, we also have some ideas about what to do if you’ve stocked up on barbecue staples but the weather turns into a washout.

But first, let’s spice things up, using Lakings’ proudly British, and sustainably sourced cuts of meat, for the final hurrah of the summer.

Bring the sunshine with Marinated Chicken and Harissa Yogurt

Chef Rosie Dicker suggests using Lakings’ succulent whole chicken portioned into eight pieces to create a vibrant, versatile dish – the meat can be roasted in the oven or cooked on a barbecue. The subtle heat from the harissa makes this dish a firm family favourite and uses ingredients most of us already have at home.

Start by whisking together the harissa, cumin, and three tablespoons of olive oil. Coat the chicken and refrigerate overnight, or use it straight away, depending on how much time you have.

The yoghurt dressing is made with garlic, lemon, herbs and cumin and helps to tenderise the meat, while the spices infuse it with a deep, rich flavour. Grilling the chicken over a barbecue enhances the smoky taste, making it a standout dish.

Dream team of lamb and spices

For those who prefer red meat, Lakings grass-fed lamb is an excellent choice. Marinated in a similar blend of yoghurt and spices, lamb chops or kebabs can be grilled to perfection. The marbling of the lamb ensures it remains juicy and flavourful, while the spices add a zesty kick.

Make life easy with our kebabs, burgers and grillsticks

Keep it traditional with Lakings Lincolnshire Pork Sausages

A fridge staple, ideal for hot dogs on the barbecue, or served with a plate of mash and greens. Our sausages are made from a traditional recipe using the finest Lincolnshire pork and herbs. We also offer chipolatas, perfect for serving at buffets and garden parties.

Don’t let your barbecue staples go to waste

If you’ve been stocking up on barbecue staples but not had the chance to cook them, there are several ways to avoid food waste and creatively repurpose them into new and exciting dishes. Here are some inventive ways to use up your leftover barbecue foods…

Burger meat Tacos or Wraps

Transform burgers intended for the barbecue into delicious tacos or wraps. Our beef burgers are made using off-cuts from our steaks and roasting joints, so you can shred them, then cook and serve them in tortillas or flatbreads with toppings such as coleslaw, avocado, salsa, and a drizzle of barbecue sauce or sour cream. This is a quick and easy way to enjoy your leftovers with a fresh twist.

Pulled Pork or Chicken Sandwiches

Leftover pulled pork made using pork shoulder or pulled chicken made with chicken breasts can make for a hearty sandwich. Pile the meat onto a toasted bun, add some pickles, coleslaw, and extra barbecue sauce for a satisfying meal. You can also melt some cheese over the meat for an extra layer of flavour.

Barbecue Pizza

Use leftover meats and vegetables as toppings for a homemade pizza. Spread a thin layer of barbecue sauce on a pizza crust and add shredded chicken, beef steaks, or pork, along with vegetables like bell peppers and onions. Top with mozzarella or cheddar cheese and bake until the crust is crispy, and the cheese is melted.

With or without sunshine, cooking with our delicious range of British products will brighten your day. Find out more at Lakings.co.uk
