Spring cuts: Lamb’s not just for Easter
Spring is the perfect time to enjoy British lamb, but this delicate meat is not just for Easter roasts. As the weather warms up, it’s time to embrace alfresco dining with fresh, flavourful lamb dishes that celebrate the season. At Lakings, we offer a selection of the finest cuts, sustainably sourced from trusted Lincolnshire farmers.
Choosing locally raised lamb supports ethical farming practices, ensures exceptional quality, and reduces food miles, making it a more sustainable choice for your table. Here are some fantastic ways to enjoy our grass-fed lamb beyond Easter, whether you’re firing up the barbecue or preparing a light springtime meal.
Chef Rosie Dicker’s butterflied leg of lamb with harissa yogurt and pomegranate
If you’re looking for the ultimate alfresco dish, Lakings’ ambassador chef Rosie Dicker says butterflied leg of lamb is a must-try. The leg is deboned and flattened (ask one of our skilled team to achieve this for you), making it ideal for cooking over charcoal.
How to prepare:
- Rosie’s fragrant marinade includes a blend of olive oil, garlic, rosemary, lemon juice, thyme and fennel seeds.
- Seal over medium heat for about 5-6 minutes per side for a beautifully charred, juicy finish and then cook on a slower heat for 35-40 minutes.
- Slice and serve with the harissa yoghurt dressing which cuts through the richness of the lamb, with the pomegranate adding a pop of sweetness
Lamb Chops – perfect for sharing
Lamb chops are quick to cook and packed with flavour, making them a fantastic choice for a quick meal. They’re delicious simply seasoned with salt and pepper, but you can elevate them with a Mediterranean-inspired marinade.
Try this:
- Coat chops in olive oil, garlic, lemon zest, oregano, and a pinch of chilli flakes.
- Sear on a hot grill or pan for 2-3 minutes per side for a juicy, pink centre.
- Pair with a Greek salad and pitta bread for a fresh, vibrant meal.
Chef Rosie Dicker’s Parmesan Crusted Lamb Chops
For something a little different, our ambassador chef Rosie Dicker says her tasty dish is one of the quickest and most satisfying to master. Lamb chops are dipped in egg and golden crumbs to coat before being fried for a few minutes on both sides until golden. Find her Parmesan Crusted Lamb Chops recipe here.
Serve your cheesy crumbed lamb chops with minted peas, feta salad and salsa verde.
Slow-cooked shoulder of lamb – a relaxed outdoor feast
If you prefer a low-effort dish that’s bursting with flavour, slow-cooked lamb shoulder is the way to go. It’s perfect for pulling apart and serving in soft rolls or as part of a mezze spread.
Cooking tips:
- Rub with a mix of smoked paprika, cumin, salt, and garlic.
- Slow roast at 150°C for 4-5 hours until fall-apart tender.
- Serve with pickled onions and a tangy slaw for a laid-back feast.
Lamb kebabs – ideal for picnics
For something easy to transport and eat outdoors, cooked lamb kebabs are a great choice. Skewer cubes of lamb with cherry tomatoes, red onion, and courgette for a colourful, delicious meal.
Top tip:
- Brush with a harissa and lemon glaze before grilling.
- Serve with a simple couscous salad and tzatziki for a complete dish.
- Or you can cheat and opt for our ready-made grillsticks, available in a variety of flavours.
