Her latest recipe is Fragrant Roast Pork shoulder – which is sure to be a hit with mum – and a delicious twist on the traditional Sunday roast.
Made using pork shoulder, boned and scored and marinated in warming herbs and spices like turmeric and ginger, Rosie’s dish is a luxuriant fusion of Asian flavours with coconut and coriander, served with fragrant basmati rice. With Mother’s Day falling slightly later in March this year, this means our grass-fed lamb is very much in season.
The foodies’ choice of lamb roast, our boned and rolled shoulder has so much to offer. Put it in the oven and forget about it for hours. We love roasting ours with lemon and thyme for a spectacularly tasty family dinner full of flavour. If you’re working within a budget and want a flavoursome joint, opt for a joint of beef brisket. A firm favourite with slow cooker or barbecue aficionados (the weather might be warm enough – you never know), brisket boasts intense marbling which delivers a real depth of flavour. The incredible savoury fat that only comes from Lincoln Red cattle, renders down during slow cooking to enrich the cooking juices – which make an incredible jus. We’re certain this would be a hit with mum.

Rosie says: “This dish can be partly made in advance, it’s a great choice for a meal that has real flavour and substance.”
Made using a mixture of minced pork and minced beef, the meatballs and sauce can be made overnight and left in the refrigerator.
