One of the quickest and most satisfying meals to have in your arsenal, this lamb dish is a fantastic recipe to master.
Rosie Recommends: Just like when you light the coals on the barbecue, ensure your frying pan isn’t too hot as the outside will burn but the inside will not cook through – and you want these to be perfectly pink… trust me.
Here’s what you’ll need
- 6 lamb chops trimmed
- 1 whole egg beaten
- 60g seasoned panko breadcrumbs or whizz stale bread
- 30g grated parmesan
Step-by-step method
- Place the lamb chops into the grated parmesan until fully coated, dip into the beaten eggs, then into the seasoned breadcrumbs, making sure they are evenly coated.
- Heat enough oil to cover the frying pan bottom.
- Fry each lamb chop on either side until golden brown.
- Serve with minted pea, feta salad and salsa verde.
