A note from our chef

Quick, easy and impressive – this will soon become one of those go-to dishes in your household.
Rosie recommends: Chimichurri is a fantastic accompaniment to most meats, I love serving it with pork as it really lifts the flavour of the chops.

Here’s what you’ll need

  • 4 pork chops, about 1-inch thick
  • Salt and pepper

For the Chimichurri

  • 2 cloves garlic, chopped
  • 1 pack fresh parsley
  • 1 pack fresh coriander
  • 2 spring onions
  • 5tbsp extra-virgin olive oil
  • 2tbsp red wine vinegar
  • 1 red chilli, deseeded and finely chopped

To serve

  • Roast potatoes

Step-by-step method

  1. Preheat the grill to a medium heat.
  2. Dry the pork chops and season with salt and pepper.
  3. Place chops on the grill and cook 5-6 minutes before turning.
  4. Remove from the grill when cooked through and allow to rest. Loosely cover to keep warm.

For the Chimichurri

  1. In a food processor, mix the chimichurri ingredients on low for 1-2 minutes or until parsley and coriander is uniformly chopped.
  2. Serve the pork chops with a generous spoonful of chimichurri and your favourite roast potatoes.
