Quick, easy and impressive – this will soon become one of those go-to dishes in your household.
Rosie recommends: Chimichurri is a fantastic accompaniment to most meats, I love serving it with pork as it really lifts the flavour of the chops.
Here’s what you’ll need
- 4 pork chops, about 1-inch thick
- Salt and pepper
For the Chimichurri
- 2 cloves garlic, chopped
- 1 pack fresh parsley
- 1 pack fresh coriander
- 2 spring onions
- 5tbsp extra-virgin olive oil
- 2tbsp red wine vinegar
- 1 red chilli, deseeded and finely chopped
To serve
- Roast potatoes
Step-by-step method
- Preheat the grill to a medium heat.
- Dry the pork chops and season with salt and pepper.
- Place chops on the grill and cook 5-6 minutes before turning.
- Remove from the grill when cooked through and allow to rest. Loosely cover to keep warm.
For the Chimichurri
- In a food processor, mix the chimichurri ingredients on low for 1-2 minutes or until parsley and coriander is uniformly chopped.
- Serve the pork chops with a generous spoonful of chimichurri and your favourite roast potatoes.
