The “Roast Once, Eat Thrice” Challenge
As we move into the final week of January, many of us are looking to tighten the belt – both literally and financially. However, at Lakings, we don’t believe that budgeting should mean settling for subpar meat.
The smartest way to eat well is to invest in a premium, larger roasting joint that serves as the foundation for multiple meals. This is “slow-food” efficiency at its finest. One roast, three meals – are you up for the challenge?
The Three Heavyweight Contenders
The Topside of Beef
Our grass-fed Topside is lean and incredibly easy to carve.
On Sunday, it’s the king of the table.
On Monday, it’s the star of a cold Beef and Horseradish Baguette. By Tuesday, we recommend following the logic of our Beef Stroganoff recipe style: flash-fry thin strips of the pre-cooked beef with mushrooms for a gourmet meal in 30 minutes.
The Loin of Pork
There is no crackling quite like Lakings crackling. A loin of pork is a fantastic value cut.
Once the Sunday roast is done, the remaining lean meat is perfect for helping you create some mid-week magic.
Take inspiration from Asian fusion flavours and toss the shredded pork with honey, soy, and ginger, and serve over noodles for a vibrant mid-week lift. Much like our Dan Dan Noodle recipe – simply sub out the pork mince for leftover shredded loin.
Or – for an easy protein-packed snack, why not whip up a batch of Pineapple Salsa to pair with leftover pork and a wrap or flatbread?
The Whole Free-Range Chicken
Our birds are slow-grown, meaning they have a higher meat-to-bone ratio than standard options.
After the drumsticks and breasts are gone, the carcass is a goldmine. Never throw away the bones. Simmering a chicken carcass or beef bone with some carrot, onion, and celery creates a stock that is worlds apart from a cube. This liquid gold can be the base for a Chicken Pie or a hearty soup.
To stretch one bird even further, switch the jointed chicken in our Coq Au Vin Blanc, for the shredded leftover chicken meat.
