A note from our chef

I just love the story behind the Herb Feb chicken that Lakings has on its butchery counter, and the resulting flavour is just incredible. Once you’ve tasted it, I’m sure you’ll agree – and not want to see any other chicken in your fridge either!
Rosie recommends: Be sure to ask one of Lakings’ talented butchery team to spatchcock your chicken for you.

Here’s what you’ll need

For the marinade

  • 3 tbsp smoked paprika
  • 3 tsp ground ginger
  • 2 tsp black pepper
  • 2 tsp sea salt
  • 3 tbsp English mustard
  • 1 clove garlic crushed
  • 1 lemon zest and juice
  • 3 tbsp olive oil

Step-by-step method

  1. To make the marinade mix all the ingredients together, adding little water to make into a paste. Rub the paste all over the chicken, cover with cling film and refrigerate for 2-8 hours.
  2. Fire up the BBQ, when the flames have died down place on the centre of the BBQ (skin side down) 15 – 20 min, turning throughout until the juices run clear and cook through.

Allow to rest for 10 minutes.
